Corned Tofu Anyone?

Well, ask and ye shall receive!
My Blogmate Mrs. Random www.mrs_random.blogspot.com has posted a recipe for corned beef-and suggestions for making it with tofu! in the comments section of Friday's blog. Knowing what I know about Mrs. Random and her cooking (the few times I have experienced her food at pot lucks have been memorable) girl is FOOD SAVVY!!! Her BLOG often discusses her culinary forays and makes me want to sneak in and raid her fridge for leftovers...
Now, I can hold my own in the kitchen (years of restaurant work has untold perks) and I am not opposed to trying new things, but the amount of prep work needed to "corn" things makes me glad for the good ol' supermarket. I'll leave that part to the professionals! I have this vision of opening the prepping pan in the second week and finding "primordial tofu" in place of the delectable "corned tofu" of my visions.
I flash to the scene in the movie "Better Off Dead"-a John Cusack CLASSIC...where his mother glops this gelatinous, oatmealy looking stuff onto his plate and says in her clueless, sunshiny voice "It's got raisins, you LIKE raisins..." (If you haven't seen it, it's worth a rent-it stands the test of time.)
If you have a few minutes right now, I suggest a visit to Mrs. Random-especially now that today is the Spring Equinox (4:26pm PST) and she is a Robin...her garden reports are sweet, her musings are amusing, and her cooking is inspirational...plus she has some other sweet links that are just plain fun. Happy Saturday-
I wanted to share a little story with you about my best friend who I have known in this incarnation since the first day of seventh grade-several years ago-and before that since...Light was invented. Forgive me if I start to sound like I'm on Oprah, but this is good stuff!
I know we have talked about her before, and I know she will be reading this before too long-HEY, SIS!!
Ginascorpina lives in Florida, and we only lived in the same, small, resort/circus town (really), in Wisconsin for seventh and half of eighth grade, and summers through high school. I moved a lot, she had kids early, we lost touch for about 5 years. She moved to Florida, I moved to NORMAL (really), and while I was still on maternity leave after Thing One, (Big-T) I got an out-of-the-blue phone call from my girl, who's mom saw my mom's ex-boyfriend, got my mom's number, got my number and got in touch!!!
We were still as connected as ever, in our life, our art, our spirituality, our outlooks, and our MUSIC-Beginning with KISS, and KC and the Sunshine Band, and developing into devoted Deadheads, we saw each other for the first time in 11 years for some shows in Cleveland over Labor Day Weekend 1993. (LONG and STRANGE doesn't begin to cover it!)
What has happened since that time is enough to fill a library with books...that I have yet to write, so I'll cut to the chase (Put DOWN the SCISSORS!!!) The reason that I am waxing nostalgic about all of this, is that it has happened again. I got all interested in NIA excersize, and after I posted a quick note about how much I LOVE IT (well-I guarantee I will go into greater detail soon-because you should all check it out) I got an e-mail from afore-mentioned best friend ever-saying that she too had recently discovered NIA for herself, and that she was completely thrilled about it too! I think she is really the incarnation of my soul that decided to be able to get a tan. Have I mentioned that she too is a mandala artist and hairwrapper...just like you-know-who?
Oprah might want to give us "best friend makeovers", but I love her JUST LIKE SHE IS!!!

Hi Kids.
I don't think I really need to go into the lore of the day, and all that, since that's been taken care of by the story tellers and the churches long enough. It fits right in with one of the classes that I have decided to take to fulfill my IP requirements, "Folklore and Religion". Sounds like it's right up my bowling lane. I'm excited to see what stories are covered in the curriculum. (You know how I like stories).
I think it's funny that this year St. Pat's falls on a Friday and it is Lent-so for my Catholic family, and their ilk-the tradition of corned beef and cabbage butts heads (lol cabbage/head...wink wink, nudge, nudge) with the tradition of not eating meat on Friday during Lent. As a vegetarian, this is never a problem for me, but I can see an unusual solution...anyone know where I can get Corned Tofu?
I heard that they were relaxing the rule for tradition's sake, and people could eat meat this Friday without having to say Hail Mary's while kneeling on dried peas or being exiled to Crete (which doesn't seem that bad these days.) You'd think this had happened once or twice before and there would be definitive church doctrines written on the subject. Maybe that's covered in the Dead Sea Scrolls...I'm no autistic savant, but it seems that this phenomena should happen every so many years.
Thought for the day: If you were an autistic savant, what would your special talent be?

Gads-Have I had enough with the paperwork? Have you had enough reading about the paperwork? I keep thinking that I have most of the resume stuff and assorted business paperwork out of the way, only to find another task awaiting me under the carnage of the most recently completed.
Today I jumped through a hoop that will allow me (if chosen...) to teach Youth Arts programs in the schools. This is the after school program as well as artist residencies. It is a great way to be able to teach kids and still be able to be a studio artist.
I got to writing up my artistic accomplishments and had to make a list of things I've done that involves teaching kids, and I came up with a pretty good sized list! It's funny when you see it actually officially written up. I'd like to meet the artist! (someone told me she was busy pushing pencils...can they be COLORED pencils?)
I have known about the deadline for a couple of weeks, but with the push for school, (and IT'S paperwork...) I had to have Baboo drive me down there-in the final moments of eligibility-so that I could sign, seal and deliver it right up to the last moment. (there's that BORN on the last day of the year joke again!) BUT I DID IT!!! Now it's another case of "Hurry up and Wait"...Good thing I have a lot of practice at that!
On the Business Plan front-it seems it is stuck in the office loop at the LMB...waiting for Shawn to sign off on it and fax it to the credit union for final approval. Fortunately, I know that the wheel needs to squeak a little for it to get some grease, and a well timed "friendly e-mail" reminder can work magic. Only 16 days until the opening of Saturday Market Season...I need access to that grant soon! It may not be possible to have the cards done before opening day at this point, but it shouldn't be long after...(all chant-"Shawn, Shawn, Shawn...") It will be fine.
As far as school goes, I have a meeting with my advisor Thursday afternoon to discuss my "course" of action. I am really hoping that I can earn a B.F.A. (5 year specialty degree) instead of a B.S. (4 year general art degree...no foreign language). I have the credits-I just need the approval...and Sana has the magic wand. I sure hope she remembers me fondly!

There is more...and it does NOT include any real mention of paperwork...it is all about the NIA excersize classes that I started taking because of the "day of healing", and am completely hooked on. I have a lot to share about it, but first I need to get some sleep-It's been an EXCITING day.) More to come...

HAPPY MONDAY!!! I sure had a full week last week. Tuesday I had a kid home half a day (throat stuff-thankfully didn't last long-or pass on), Wednesday there was a BOMB THREAT at their school so they stayed home. Thursday they had a half day because their basketball team was in the playoffs, and they went to support them at Mac Court, and Friday was a SNOW DAY!!! I'm not sure how I managed to stay on track-but I must say I did okay!
I have been here for 8 years, and I think there has been one snow day every other year, but last Friday we got one. I like the weather here, it never gets that horrible midwest style "wind chill factor" that turns your boogers to ice if you try to breathe, and in the summer, the humidity doesn't really stick you to your sheets for three months running.
Recently, we have run the gamut as far as weather is concerned. You wake up and it is grey, and there is frost on your car, it rains, then hails. Then it clears, and gets sunny but with a decieving breeze that cuts right through your body, then it clouds up again and a sleety rain turns to snow, and all of a sudden everything is covered-for about 10 minutes...then...Snow never lasts very long in the valley-but you can go see it in the mountains if you want to-it's a WIN-WIN!! This is what we endure in order to have the most picture perfect July's on the planet. I guess I'll just stay bundled a little tighter, and think warm thoughts. I heard that around 60% of the University of Kansas was hit by tornadoes last night...SURRENDER DOROTHY!!!
Hopefully things will be calmer at the UofO while I am over there talking to the professor at the Ceramics department about my degree. I have to admit a certain amount of nerves about going over there and asking Sana to take me back into the fold, if only for one semester-but it has to be done, so off I go...

Hi Kids,
Yesterday I got word that my financial aid had been processed already, and I got my number from which they decide to give me aid or not. I have to find out from the University what the exact numbers are, but if they will cover my tuition, and maybe throw me a couple of bones for books and supplies, I've got the rest covered! (OOOMMMMMM...bring it on!)
I got my transcripts from the University and they say that I need a multi-cultural class and HAHAHA-two basic drawing, and two basic design classes!!!LOL I have 5 seperate drawing classes on my transcripts, and countless studio hours. It is simply a matter of talking to an advisor, and fitting the ones I have into the slots they require. Worst case scenario-I have to take a drawing class!!! Boo Hoo!
The next three months are going to be TERRIFIC for an intellectual-communication cycle as Mercury and the Sun aspect each other. Mars squares Uranus which is all about Enlightenment. This quarter is ripe for learning new things, or more likely, learning what we already know...and using it!
The Full moon lunar eclipse in Virgo on Tuesday the 14th highlights AWARENESS and deep transformation. Soak it up!

I did it. I filed my student aid (which I WILL qualify for!), I put in my RE-application for school, and I got my passwords and access to DUCKWEB so that I can sign up for classes. I need to wait until tomorrow for access, but then I can check my transcript, and fill in the blanks for an expected degree in JUNE 2006 (that's this year!!!) All PRAISE the Goddesses of Registration and Transcripts, and help me get through without a hitch in my GIDDY-UP. Can't wait to finish it!

You can tell by the way my Tuesday blog was titled, and how I didn't really mention school in the BLOG, that I am blocking. Here it is like three weeks till school starts at U of O, and I have yet to commit to it. I downloaded the pre-forms, but the FAFSA (student aid) site wouldn't accept my password to file on line (funny-they took my payment with that password NO PROBLEM!) I really have to go and talk to them in person, and here I am talking to you, my loyal fans!
I really do want to go and get my degree done. It is because of financial aid that I didn't get it done already, but mostly it is because I took no for an answer on something I should have pushed for. It is good for the University that I get my degree, and I am going to make it happen. I have built this up to be a monster in my mind, I HATE confrontation, but I know that I can do this-IT IS TIME.
What I need them to do is drop a bunch of credits that are useless toward my degree-I hate to admit that many of my credits are older than the people working in the financial aid department! If I can get them to drop about 15 credits, I will qualify for aid, and I can finish. The last time I tried the girl helping me said she wouldn't drop them. I took no for an answer because it was easier. WELL, LOOK OUT-It's not going to be so easy to get rid of me this time. I have one semester between me and my degree...give it to me!!!
